Ingredients
- 1 pkg. raspberry jello
- 1 c. hot water
- 1 c. crushed or diced pineapple, drained (save juice)
- 1/2 c. chopped celery
- 1/2 c. chopped nuts
- 2 Tbsp. lemon juice
- 1 can whole cranberry sauce or 1 c. fresh cranberries, chopped fine
Method
- Mix jello as directed on package.
- For second cup of water use pineapple juice that was drained from can.
- Add celery, nuts, pineapple and lemon juice.
- Mix well and put salad in glass bowl or jello mold that has been oiled.
- After jello sets 3 hours, stir to mix fruit and vegetables evenly.
- Let set in refrigerator overnight.
- Good with chicken or turkey.
- Also good with cottage cheese for lunch.
