Ingredients

  • 1 pkg. raspberry jello
  • 1 c. hot water
  • 1 c. crushed or diced pineapple, drained (save juice)
  • 1/2 c. chopped celery
  • 1/2 c. chopped nuts
  • 2 Tbsp. lemon juice
  • 1 can whole cranberry sauce or 1 c. fresh cranberries, chopped fine

Method

  • Mix jello as directed on package.
  • For second cup of water use pineapple juice that was drained from can.
  • Add celery, nuts, pineapple and lemon juice.
  • Mix well and put salad in glass bowl or jello mold that has been oiled.
  • After jello sets 3 hours, stir to mix fruit and vegetables evenly.
  • Let set in refrigerator overnight.
  • Good with chicken or turkey.
  • Also good with cottage cheese for lunch.
