Ingredients

  • 1 c. flour
  • dash of salt
  • 1 c. water
  • 1/2 c. butter
  • 4 eggs

Method

  • Preheat oven to 400°.
  • Lightly grease 2 cookie sheets.
  • Sift the flour and salt into a small bowl and set aside.
  • In a medium-size saucepan boil the water and butter.
  • Reduce the heat to low and add the flour all at once.
  • Stir vigorously with a wooden spoon and cook and stir until mixture forms a ball.
  • Remove from heat and cool about 3 minutes.
  • Beat in eggs, one at a time, until smooth after each addition.
  • Drop mixture by heaping tablespoonfuls onto the cookie sheet, about 3 inches apart.
  • Bake 30 to 35 minutes or until golden brown and puffy.
  • Turn off the oven.
  • Slit or slice the top off each cream puff and return to the oven for about 3 minutes to dry the inside.
