Ingredients

  • 1 (8 1/4 oz.) can crushed pineapple, drained (reserve liquid)
  • 1 1/2 c. water (including pineapple juice)
  • 1 (8 oz.) pkg. lime jello
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 c. frozen whipped topping, thawed

Method

  • Add enough water to reserve pineapple liquid to measure 1 1/2 cups; heat to boiling.
  • Pour boiling liquid into gelatin; stir until dissolved.
  • Refrigerate until gelatin is slightly thickened, but not set.
  • Beat softened cream cheese into slightly thick jello until mixture is fluffy and cheese is in tiny pieces.
  • Place in mixer and beat at low speed.
  • Mix pineapple and whipped topping into jello/cheese mixture.
  • Pour into 4-cup mold and chill until firm.
