Ingredients
- 1 (8 1/4 oz.) can crushed pineapple, drained (reserve liquid)
- 1 1/2 c. water (including pineapple juice)
- 1 (8 oz.) pkg. lime jello
- 1 (8 oz.) pkg. cream cheese, softened
- 1 c. frozen whipped topping, thawed
Method
- Add enough water to reserve pineapple liquid to measure 1 1/2 cups; heat to boiling.
- Pour boiling liquid into gelatin; stir until dissolved.
- Refrigerate until gelatin is slightly thickened, but not set.
- Beat softened cream cheese into slightly thick jello until mixture is fluffy and cheese is in tiny pieces.
- Place in mixer and beat at low speed.
- Mix pineapple and whipped topping into jello/cheese mixture.
- Pour into 4-cup mold and chill until firm.
