Ingredients
- 1 1/2 lb. peeled and deveined raw or thawed frozen medium shrimp
- 3 minced cloves garlic
- 1/4 c. chopped parsley
- 1 tsp. crumbled basil
- 1 tsp. dry mustard
- 1 tsp. salt
- 1/2 c. olive oil
- 3 Tbsp. lemon juice
- 20 to 25 slices bacon, halved
Method
- In shrimp are frozen, thaw on paper toweling to absorb moisture.
- Combine all remaining ingredients except bacon.
- When shrimp are completely defrosted, pour marinade over them.
- Let shrimp marinate in refrigerate several hours.
- Drain.
- Wrap each shrimp in bacon and secure with toothpick.
- Broil until shrimp are pink and bacon crisp.
- When serving, replace burnt toothpicks with fresh ones.
- Yields 6 appetizer servings.
