Ingredients

  • 12 oz. tiny shrimp
  • 1/3 c. mayonnaise (low calorie)
  • 1 Tbsp. pineapple juice
  • 1/2 tsp. mild curry powder
  • 1/8 tsp. crushed pepper (red hot)
  • 1/2 c. celery, finely diced
  • 1/4 c. red bell pepper, diced
  • 1/2 c. pineapple chunks
  • salt and pepper to taste
  • 4 pieces leaf lettuce
  • 4 pineapple rings (to garnish)
  • red bell pepper rings (to garnish)

Method

  • Thoroughly combine ingredients from shrimp through pineapple chunks.
  • Season with salt and pepper to taste.
  • Cover and chill until serving time.
