- 12 oz. tiny shrimp
- 1/3 c. mayonnaise (low calorie)
- 1 Tbsp. pineapple juice
- 1/2 tsp. mild curry powder
- 1/8 tsp. crushed pepper (red hot)
- 1/2 c. celery, finely diced
- 1/4 c. red bell pepper, diced
- 1/2 c. pineapple chunks
- salt and pepper to taste
- 4 pieces leaf lettuce
- 4 pineapple rings (to garnish)
- red bell pepper rings (to garnish)
Method
- Thoroughly combine ingredients from shrimp through pineapple chunks.
- Season with salt and pepper to taste.
- Cover and chill until serving time.
