Ingredients
- 2 c. grated carrots
- 2 c. flour
- 1 c. brown sugar
- 1/2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 15 oz. can pineapple, drained
- 1 c. raisins
- 1/2 c. ground walnuts
- 1 tsp. grated orange peel
Method
- Cream eggs, sugar and oil.
- Add flour, baking soda, salt and cinnamon.
- Mix well.
- Add pineapple, carrots, raisins, walnuts and orange peel.
- Pour batter into greased and floured 9-inch pans. Bake at 350° for 30 to 45 minutes or until center springs back when lightly touched or toothpick inserted into center comes out clean.
