Ingredients

  • 2 c. grated carrots
  • 2 c. flour
  • 1 c. brown sugar
  • 1/2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 15 oz. can pineapple, drained
  • 1 c. raisins
  • 1/2 c. ground walnuts
  • 1 tsp. grated orange peel

Method

  • Cream eggs, sugar and oil.
  • Add flour, baking soda, salt and cinnamon.
  • Mix well.
  • Add pineapple, carrots, raisins, walnuts and orange peel.
  • Pour batter into greased and floured 9-inch pans. Bake at 350° for 30 to 45 minutes or until center springs back when lightly touched or toothpick inserted into center comes out clean.
