Ingredients
- 1 pound Yellow Potatoes
- 4 Tablespoons Chicken Stock
- 1 Tablespoon Dairy Free Milk
- 1-1/2 teaspoon Sea Salt
- 1/2 teaspoons Garlic Powder
- 2 Chopped Chives Or Scallions (optional)
Method
- Bring a large pot of water to a boil. Wash, peel, and cut the potatoes into chunks.
- Add potatoes to the boiling water. Once potatoes can be pierced with a fork, drain but, using the same pot, add stock amd milk, mashing and combining as you go. Add seasonings and more sea salt, if desired.
- Transfer mashed potatoes to a bowl and garnish or mix in the chives/scallions if using.
