Ingredients

  • 1 pound Yellow Potatoes
  • 4 Tablespoons Chicken Stock
  • 1 Tablespoon Dairy Free Milk
  • 1-1/2 teaspoon Sea Salt
  • 1/2 teaspoons Garlic Powder
  • 2 Chopped Chives Or Scallions (optional)

Method

  • Bring a large pot of water to a boil. Wash, peel, and cut the potatoes into chunks.
  • Add potatoes to the boiling water. Once potatoes can be pierced with a fork, drain but, using the same pot, add stock amd milk, mashing and combining as you go. Add seasonings and more sea salt, if desired.
  • Transfer mashed potatoes to a bowl and garnish or mix in the chives/scallions if using.
