Ingredients

  • 1 cup chopped pitted dates
  • 2 tablespoons sugar
  • ¼ cup water
  • 2 tablespoons chopped pecan nuts
  • 90 g butter
  • ½ cup brown sugar
  • 1 egg yolk
  • 1½ cups plain flour
  • ½ teaspoon ground mixed spice
  • ¼ teaspoon bicarbonate of soda
  • 1 tablespoon milk

Method

1. Preheat oven to moderate 180°C. Brush oven trays with melted butter or oil. Combine dates, sugar and water in a medium pan, stir over medium heat for 2 minutes or until water is absorbed. Remove dates from heat, stir in nuts, cool.

2. Using electric beaters, beat butter and brown sugar in small mixing bowl until light and creamy. Add egg yolk, beat until combined.

3. Add sifted flour, spice, soda and milk. Press together to form a soft dough. Turn onto lightly floured surface, knead 2 minutes until smooth. Leave, covered with plastic wrap, in refrigerator 30 minutes.

4. Roll out onto lightly floured surface to a rectangle 20 × 28 cm. Spread evenly with date mixture. Roll up from the long side. Wrap in plastic wrap, refrigerate 15 minutes.

5. Using a sharp knife cut log into 8 mm-thick rounds. Place on prepared trays, allowing room for spreading. Bake for 10 minutes or until lightly browned. Cool on trays.
