Ingredients
- 5 medium yellow squash
- 1 medium onion, chopped
- 1 egg, lightly beaten
- 1 (6 oz.) pkg. Mexican-style cornbread or regular cornbread mix
- 1 (8 oz.) cream-style corn
- 1/2 c. chunky picante sauce
- 2 Tbsp. butter, softened
- salt and pepper to taste
Method
- Preheat oven to 350°.
- Boil squash and onion approximately 30 minutes or until tender. Drain and mash with fork. Add egg. Mix well. Add the remaining ingredients. Mix thoroughly. Put into a 1 1/2-quart baking dish. Bake 50 minutes or until set.
