Ingredients

  • 5 medium yellow squash
  • 1 medium onion, chopped
  • 1 egg, lightly beaten
  • 1 (6 oz.) pkg. Mexican-style cornbread or regular cornbread mix
  • 1 (8 oz.) cream-style corn
  • 1/2 c. chunky picante sauce
  • 2 Tbsp. butter, softened
  • salt and pepper to taste

Method

  • Preheat oven to 350°.
  • Boil squash and onion approximately 30 minutes or until tender. Drain and mash with fork. Add egg. Mix well. Add the remaining ingredients. Mix thoroughly. Put into a 1 1/2-quart baking dish. Bake 50 minutes or until set.
