- 2 cans salmon, drained and flaked
- 1 tsp. Dijon mustard
- 2 cloves garlic
- 1 tsp. chili powder
- 1/2 c. onion
- 1/4 c. celery
- 1/2 c. corn kernels
- 1 tsp. chopped cilante (optional)
- 1/2 tsp. black pepper
- 1 egg
- dash of red pepper
- 1/2 c. mayonnaise
- 1 c. cracker meal
Method
- Beat 1/2 cup mayonnaise, egg and mustard; add to salmon and other ingredients.
- Make into cakes and refrigerate about 1 hour. Dip into cracker meal and fry in olive oil.
