Ingredients

  • 2 1/2 doz eggs, hard boiled
  • 1/2 cup finely chopped onion
  • 2/3 cup finely chopped dill pickles
  • 1 Tbsp pickle juice
  • 5 Tbsp mustard
  • 5 Tbsp mayonnaise
  • Salt and pepper to taste
  • Paprika

Method

  • Shell, rinse and split eggs.
  • Place whites on a tray.
  • Set aside. In large bowl, mix yolks, onion, pickles, juice, mustard and mayonnaise.
  • (If mixture is too dry, add a little more mayonnaise.) Add salt and pepper.
  • Fill egg whites with yolk mixture.
  • Sprinkle with paprika.
  • Refrigerate until serving time.
