Ingredients
- 2 1/2 doz eggs, hard boiled
- 1/2 cup finely chopped onion
- 2/3 cup finely chopped dill pickles
- 1 Tbsp pickle juice
- 5 Tbsp mustard
- 5 Tbsp mayonnaise
- Salt and pepper to taste
- Paprika
Method
- Shell, rinse and split eggs.
- Place whites on a tray.
- Set aside. In large bowl, mix yolks, onion, pickles, juice, mustard and mayonnaise.
- (If mixture is too dry, add a little more mayonnaise.) Add salt and pepper.
- Fill egg whites with yolk mixture.
- Sprinkle with paprika.
- Refrigerate until serving time.
