- 1/2 c. raisins
- 5 dates or prunes, finely chopped
- 5 figs, chopped
- 15 dried apricot halves, finely chopped
- 1 orange rind, grated
- 1/2 c. oleo
- 2 eggs
- 1 1/4 c. plain flour
- 1/2 tsp. soda
- 1 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. cloves
- 1 tsp. vanilla
Method
- Combine raisins, dates or prunes, figs, apricots and orange rind in small bowl.
- Set aside.
- Cream oleo until light and fluffy.
- Add eggs and vanilla.
- Stir in flour, soda, baking powder and spices.
- Pour in fruit mixture and meat until blended.
- Bake at 325° for 45 to 55 minutes.
- Cool and store in upright container for 3 days.
- Freezes well.
