Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained well
  • 1 large onion
  • 1/2 lb. mushrooms, sliced
  • 1 lb. Swiss cheese, cut in 1/2-inch cubes
  • 4 eggs, beaten
  • 1 stick butter

Method

  • Saute onion and mushrooms in butter until onion is translucent. Let cool slightly.
  • In big bowl, mix spinach, eggs and cheese.
  • Add onion mixture.
  • Mix thoroughly.
  • Add salt and pepper to taste.
  • Put in an ovenproof 8 x 12-inch glass dish.
  • Bake in preheated 350° oven for approximately 45 minutes or until golden brown.
