Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained well
- 1 large onion
- 1/2 lb. mushrooms, sliced
- 1 lb. Swiss cheese, cut in 1/2-inch cubes
- 4 eggs, beaten
- 1 stick butter
Method
- Saute onion and mushrooms in butter until onion is translucent. Let cool slightly.
- In big bowl, mix spinach, eggs and cheese.
- Add onion mixture.
- Mix thoroughly.
- Add salt and pepper to taste.
- Put in an ovenproof 8 x 12-inch glass dish.
- Bake in preheated 350° oven for approximately 45 minutes or until golden brown.
