Ingredients
- 1 1/2 c. self-rising corn meal
- 2 Tbsp. flour
- 2 Tbsp. oil
- 1 egg
- 3/4 c. buttermilk
- 1/2 c. water
Method
- Preheat oven to 450°.
- Place skillet on stove eye with oil; let skillet get hot.
- Mix corn meal, flour, buttermilk and water. Add well beaten egg; mix well.
- Pour into skillet.
- Leave on stove eye for about one minute.
- Place hot skillet on bottom rack in oven for 5 minutes.
- Move to top rack and turn on broiler until golden brown.
