Ingredients

  • 2 chicken bouillon cubes
  • 1/2 c. hot water
  • 4 c. mashed potatoes
  • 2 eggs, beaten
  • 2 Tbsp. chopped onion
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. minced parsley

Method

  • Dissolve bouillon cubes in hot water.
  • Place mashed potatoes in large bowl.
  • Add slightly beaten eggs, bouillon cube mixture, onion, salt, pepper and parsley; blend well.
  • Place in a 1-quart greased casserole.
  • Bake, uncovered, in a 350° oven with chicken, or until browned on top.
