Ingredients
- 2 chicken bouillon cubes
- 1/2 c. hot water
- 4 c. mashed potatoes
- 2 eggs, beaten
- 2 Tbsp. chopped onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. minced parsley
Method
- Dissolve bouillon cubes in hot water.
- Place mashed potatoes in large bowl.
- Add slightly beaten eggs, bouillon cube mixture, onion, salt, pepper and parsley; blend well.
- Place in a 1-quart greased casserole.
- Bake, uncovered, in a 350° oven with chicken, or until browned on top.
