Ingredients

  • 4 cups tomato juice cold
  • 1 small onions minced
  • 2 cups tomatoes freshly chopped
  • 1 cup green bell peppers minced
  • 1 teaspoon honey
  • 1 each garlic cloves crushed
  • 1 each cucumbers diced
  • 2 each scallions, spring or green onions chopped
  • 1/2 each limes juice only
  • 1/2 each lemon juice only
  • 2 tablespoons white wine vinegar
  • 1 teaspoon tarragon leaves
  • 1 teaspoon basil
  • 1 dash cumin
  • 1/4 cup parsley leaves fresh, minced
  • 1 dash red hot pepper sauce
  • 2 tablespoons olive oil
  • 1 x salt and black pepper to taste

Method

  • Combine all ingredients and puree if desired.
  • Chill for 2 hours.
