- 4 cups tomato juice cold
- 1 small onions minced
- 2 cups tomatoes freshly chopped
- 1 cup green bell peppers minced
- 1 teaspoon honey
- 1 each garlic cloves crushed
- 1 each cucumbers diced
- 2 each scallions, spring or green onions chopped
- 1/2 each limes juice only
- 1/2 each lemon juice only
- 2 tablespoons white wine vinegar
- 1 teaspoon tarragon leaves
- 1 teaspoon basil
- 1 dash cumin
- 1/4 cup parsley leaves fresh, minced
- 1 dash red hot pepper sauce
- 2 tablespoons olive oil
- 1 x salt and black pepper to taste
Method
- Combine all ingredients and puree if desired.
- Chill for 2 hours.
