Ingredients

  • 2 cup medium grain rice
  • 3 1/2 cup water
  • 1 32 oz can diced tomatoes
  • 1 yellow onion
  • 1 1/2 tbsp vegetable oil
  • 1 salt and pepper

Method

  • Heat oil in sauce pot.
  • Add onions and sweat until translucent.
  • Add tomatoes and rice.
  • Add salt and pepper.
  • Stir.
  • Cook 30 seconds
  • Add water.
  • Bring to simmer.
  • Cover and cook 20 minutes.
  • Remove from heat.
  • Leave covered to steam 5-10 minutes.
