Ingredients
- 2 cup medium grain rice
- 3 1/2 cup water
- 1 32 oz can diced tomatoes
- 1 yellow onion
- 1 1/2 tbsp vegetable oil
- 1 salt and pepper
Method
- Heat oil in sauce pot.
- Add onions and sweat until translucent.
- Add tomatoes and rice.
- Add salt and pepper.
- Stir.
- Cook 30 seconds
- Add water.
- Bring to simmer.
- Cover and cook 20 minutes.
- Remove from heat.
- Leave covered to steam 5-10 minutes.
- Fluff
