Ingredients

  • 1 (10 oz.) pkg. deli style tortilla chips
  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/8 tsp. garlic powder
  • 2 (8 oz.) cans tomato sauce
  • 1 pt. sour cream or yogurt
  • 1 pt. cottage cheese (may use low-fat)
  • 1 c. diced chilies to taste
  • 1 Tbsp. oil
  • 1 pkg. grated Monterey Jack cheese

Method

  • Brown ground beef, onion and garlic powder in oil.
  • Add tomato sauce and simmer 10 minutes.
  • Mix sour cream, cottage cheese and chilies.
  • Line a greased casserole dish (9 x 13-inch) with chips. Add in layers of 1/2 meat mixture, 1/2 the cream mixture and 1/2 of cheese.
  • Repeat layers of meat, sour cream and Monterey cheese. I reserve some crushed chips to sprinkle over top.
  • This gives a crunchy top.
  • Some prefer the plain, cheesy top.
