Ingredients
- 1/3 c. shortening
- 2 c. sifted cake flour
- 1 c. sugar
- 2 tsp. baking powder
- 3/4 tsp. salt
- 3/4 c. milk
- 1 unbeaten egg
- 1 tsp. vanilla
Method
- Stir shortening just to soften.
- Sift in dry ingredients.
- Add 1/2 the milk and egg.
- Mix until all flour is dampened, then beat vigorously 2 minutes.
- Add rest of milk and vanilla; beat 1 minute. Fill paper-lined cupcake pans 1/2 full.
- Bake at 375° for 25 to 30 minutes.
- Makes 18 to 20.
