Ingredients

  • 12 tablespoon salt
  • 1 teaspoon dry mustard
  • 1 12 tablespoons sugar
  • 18 teaspoon cayenne pepper
  • 12 tablespoon flour
  • 3 egg yolks
  • 34 cup milk, scant
  • 14 cup cider vinegar
  • 1 12 tablespoons melted butter

Method

  • Mix together well all of the dry ingredients.
  • Beat slightly the egg yolks and add them to the dry ingredients, then the milk, butter, and then VERY SLOWLY the vinegar.
  • Place this mixture in a double boiler and cook over simmering water until the mixture thickens.
  • Remove from heat and let cool.
  • Refrigerate for up to a week or more.
