Ingredients
- 1 kg potatoes
- 1 None onion, peeled and finely diced
- 200-250 g tomatoes, diced
- 2 None lamb steaks (about 300g each), cut into pieces
- 4 None eggs
- 4 tbsp milk
- 6 tbsp oil
- 100 g ham, cut into small cubes
- None None parsley for garnish
Method
- Cook the potatoes in boiling water for 20-25 mins. Rinse the potatoes under cold water, remove the skin then set aside to cool. Slice.
- Heat 2 tbsp oil in a large pan and sear the lamb, turning as necessary. Remove the lamb, add the remaining oil and fry the potatoes until they're golden brown all over. Towards the end, add the onion and diced ham and saute until the onions are translucent. Finally stir in the tomatoes and lamb and season to taste. Whisk together the eggs and milk and season. Add to the pan, cover and cook over low heat for 10 mins. Serve garnished with parsley.
