Ingredients

  • 2 black Genoa figs
  • 40ml extra virgin olive oil
  • 40ml fig balsamic (available at delis and specialty stores)*
  • 100g gorgonzola piccante
  • 100g wild rocket
  • 6 slices shaved prosciutto
  • A few torn basil leaves
  • *Balsamic vinegar can used if fig balsamic is unavailable.

Method

Slice the figs into six and place on the plate to form a flower.

Dress with extra virgin olive oil and fig balsamic. Arrange broken pieces of gorgonzola over the fig. Dress the rocket with a little oil, season with salt and black pepper and arrange over the gorgonzola. Then place the prosciutto over the rocket and garnish with basil leaves.
