Ingredients

  • 1 c. cornmeal
  • 1 tsp. salt
  • 3/4 tsp. chili powder
  • 1 c. cold water
  • 2 c. boiling water
  • 1 Tbsp. oil
  • 1/3 c. chopped green pepper
  • 1 lb. ground steak or hamburger
  • 1/2 tsp. salt
  • 1/2 c. sliced ripe olives
  • 2 1/2 c. cooked tomatoes, chopped
  • 1 Tbsp. chili powder
  • 1/2 tsp. salt
  • 1 c. grated cheese

Method

  • Mix first 4 ingredients.
  • Add slowly to boiling water and cook slowly, covered, for 10 minutes, stirring occasionally.
  • Line bottom and sides of a 2-quart casserole with cooked cornmeal.
  • Set aside.
  • Cook next 4 ingredients until meat browns, stirring often. Add next 4 ingredients and simmer for 5 minutes, stirring often. Put this mixture in cornmeal lined casserole.
  • Top with grated cheese.
  • Bake at 350° for about 30 minutes.
  • Serves 6.
