Ingredients

  • 4 medium apples, sliced thin
  • 8 t. sugar
  • 2 t. cinnamon
  • 4 eggs
  • 2 C. sugar
  • 1 C. plus 1T. Oil
  • 3 C. sifted flour
  • 3 t. baking powder
  • 1/2 t. salt
  • 1/2 C. orange juice
  • 1 t. vanilla extract

Method

  • Grease and flour a 9" tube pan, and preheat the oven to 350°. In a small bowl, mix the 8 t. sugar with the cinnamon and set aside. In large bowl, beat the eggs until thickened, then add sugar and oil, beating until thick and lemony in color. Gradually add dry ingredients alternately with the orange juice. Add vanilla last.
  • Pour about one fourth of the batter into the prepared pan, then top with a layer of apples and dust with the cinnamon-sugar. Repeat with two more layers of apples, ending with batter on top.
  • Bake for about one hour and ten minutes. Sprinkle with powdered sugar. Keeps well and will serve 12-16.
