Ingredients
- 8 oz good quality dark chocolate, chopped ( White chocolate or Milk Chocolate can be subsituted if you prefer )
- 1 pints fresh whole berries, I used rasberries, blueberries and blackberries, small whole strawberries can also be used if you can find small ones, cut fruit will not work.
Method
- Line a baking sheet or tray with parchment paper
- Melt chocolate, either carefully in microwave or in a heat proof bowl over simmering water, or a double boiler.
- Pour melted chocolate on to parchmemt paper.
- Smooth to a even 1/4 inch layer.
- Cool just 1 to 2 minutes
- While still warm place berries in chocolate, pressing very gently in a single layer.
- Chill at least 2 hours, until chocolate is hard.
- With a small sharp knife cut between berries into pieces and place on seving plate.
- Keep cold.
- This can be made the day before, but after about 24 hours the fruit begins to soften and it is best eaten before then.
