Ingredients

  • 1 c. sugar
  • 1 1/4 c. cold water
  • 4 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 Tbsp. lemon juice
  • few drops red food coloring
  • 1 qt. fresh or frozen strawberries
  • 1 (9-inch) baked pie shell
  • 1 c. whipping cream

Method

  • Dissolve sugar in 1/2 cup cold water.
  • Bring to a boil.
  • Add remaining water to cornstarch to make a smooth paste.
  • Add paste to sugar mixture.
  • Cook until transparent. Remove from heat.
  • Add salt, lemon juice and enough coloring to make a light shade of red.
  • Reserve 1 cup of berries for garnishing pie.
  • Cut remaining berries into 2 or 3 pieces.
  • Pour mixture over cut berries. Let cool.
  • Pour into pie shell.
  • Garnish with whipped cream and whole strawberries.
