Ingredients

  • 6 ears fresh corn
  • 2 Tbsp. butter
  • 1 Tbsp. bacon grease
  • sugar, salt and pepper to taste

Method

  • Over a big bowl, cut the kernels off the ears of corn.
  • Gently scrape the knife against the cobs to get the milky liquid to drip into bowl.
  • Melt butter and bacon grease over medium heat in large skillet (cast-iron is best).
  • Stir in corn.
  • Simmer 8 to 10 minutes until tender.
  • Stir frequently.
  • If corn seems to be drying out, add a bit of hot water to keep it moist.
  • Makes 4 servings.
