Ingredients
- 4 eggs
- 1 small can tomatoes or 4 fresh tomatoes, quartered
- sprinkle of onion or garlic powder
- 1/2 tsp. dried basil
- pinch of salt and pepper
- 1 Tbsp. olive oil
Method
- Beat eggs lightly in a bowl; set aside.
- In a large frypan, place oil and heat.
- Cook tomatoes with rest of ingredients until tomatoes are cooked, about 15 to 20 minutes.
- Stir in eggs and keep stirring until mixture thickens like scrambled eggs.
- Serve over toast slices.
- Serves 2 or 3 persons.
