Ingredients

  • 4 eggs
  • 1 small can tomatoes or 4 fresh tomatoes, quartered
  • sprinkle of onion or garlic powder
  • 1/2 tsp. dried basil
  • pinch of salt and pepper
  • 1 Tbsp. olive oil

Method

  • Beat eggs lightly in a bowl; set aside.
  • In a large frypan, place oil and heat.
  • Cook tomatoes with rest of ingredients until tomatoes are cooked, about 15 to 20 minutes.
  • Stir in eggs and keep stirring until mixture thickens like scrambled eggs.
  • Serve over toast slices.
  • Serves 2 or 3 persons.
