Ingredients

  • 1 head iceberg lettuce
  • 1/4 c. salad oil
  • 2 tsp. vinegar
  • 2 tsp. salt
  • 1/2 tsp. sweet basil
  • 1/4 tsp. garlic powder
  • 2 c. cubed, cooked turkey or chicken
  • 1/2 onion, thinly sliced into rings
  • 1 tomato, cubed
  • 1/2 avocado, peeled and sliced
  • 1 tangerine or orange, peeled and sectioned

Method

  • Core, rinse and drain lettuce.
  • Chill in plastic bag.
  • Reserve 4 whole leaves for lettuce cups; shred enough lettuce to make 4 cups.
  • Set aside.
  • Blend oil, vinegar, salt, basil, garlic powder and pepper.
  • Combine with turkey or chicken, onion and tomato; toss gently to mix.
  • Arrange lettuce cups on 4 salad plates.
  • Add shredded lettuce, then top with turkey mixture.
  • Garnish with avocado slices and tangerines or orange sections.
  • Serve at once. Yield: 4 servings.
