Ingredients
- 1 Tbsp. oil
- 1 lb. boneless chicken breasts, cut into strips
- 2/3 c. sliced carrots
- 1/2 c. broccoli florets
- 1 medium onion, sliced
- 2 envelopes Lipton cream of chicken flavor Cup-a-Soup
- 1 c. water
- salt and pepper
- hot, cooked rice or noodles
Method
- In a large skillet, heat oil and cook chicken with vegetables over medium-high heat, stirring constantly for 5 minutes or until chicken is golden and vegetables are crisp-tender.
- Blend Cup-a-Soup with water; add to skillet.
- Bring to a boil, then simmer, uncovered, stirring occasionally for 5 minutes or until sauce is thickened.
- Add salt and pepper.
- Serve over hot rice or noodles.
