Ingredients

  • 1 Tbsp. oil
  • 1 lb. boneless chicken breasts, cut into strips
  • 2/3 c. sliced carrots
  • 1/2 c. broccoli florets
  • 1 medium onion, sliced
  • 2 envelopes Lipton cream of chicken flavor Cup-a-Soup
  • 1 c. water
  • salt and pepper
  • hot, cooked rice or noodles

Method

  • In a large skillet, heat oil and cook chicken with vegetables over medium-high heat, stirring constantly for 5 minutes or until chicken is golden and vegetables are crisp-tender.
  • Blend Cup-a-Soup with water; add to skillet.
  • Bring to a boil, then simmer, uncovered, stirring occasionally for 5 minutes or until sauce is thickened.
  • Add salt and pepper.
  • Serve over hot rice or noodles.
