- 6 oz. linguini
- 2 whole boned and skinned chicken breasts
- 1 small onion chopped
- 4 cloves garlic minced
- 1/2 tsp. dried basil
- 2 Tbsp. butter
- 1 medium zucchini sliced
- 1 c. sliced mushrooms
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 (16 oz.) can chicken broth or save broth from chicken
- chicken base (optional)
Method
- Cook breast in boiling water until tender.
- Save broth and cut chicken into bite size pieces, set aside.
- Cook linguini by package directions, drain and set aside.
- Place the butter, spices, vegetables and chicken into a skillet and saute.
- After vegetables are crisp tender, add the broth and heat.
- Add the drained linguini to the vegetable mix and stir.
