Ingredients

  • 6 oz. linguini
  • 2 whole boned and skinned chicken breasts
  • 1 small onion chopped
  • 4 cloves garlic minced
  • 1/2 tsp. dried basil
  • 2 Tbsp. butter
  • 1 medium zucchini sliced
  • 1 c. sliced mushrooms
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (16 oz.) can chicken broth or save broth from chicken
  • chicken base (optional)

Method

  • Cook breast in boiling water until tender.
  • Save broth and cut chicken into bite size pieces, set aside.
  • Cook linguini by package directions, drain and set aside.
  • Place the butter, spices, vegetables and chicken into a skillet and saute.
  • After vegetables are crisp tender, add the broth and heat.
  • Add the drained linguini to the vegetable mix and stir.
