Ingredients

  • 2/3 c. whole wheat flour
  • 2/3 c. unbleached flour
  • 1/2 c. quick rolled oats
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon grnd cinnamon
  • 4 egg whites
  • 1/3 c. honey
  • 1/4 c. canola oil
  • 1 teaspoon vanilla
  • 1/3 c. orange juice
  • 3/4 c. apples or possibly pears, shredded
  • 1/2 c. cranberries
  • 1/4 c. raisins
  • 1/4 c. dates, minced

Method

  • CAKE: Combine both flours, oats, baking soda and cinnamon.
  • In another bowl, whisk together egg whites and honey.
  • Whisk in oil and vanilla then orange juice.
  • Stir in apples or possibly pears, cranberries, raisins and dates.
  • Pour fruit mix over the dry ingredients.
  • Fold till dry ingredients are just moistened.
  • Coat a 9 x 13 inch pan, spread batter proportionately.
  • Bake at 350 degrees 20 to 25 min till brown and hard to the touch.
  • Cold on wire rack.
