- 2 cups of spring lettuce mix
- 1/4 of a green apple cut into 3 slices Safeway 1 lb For $0.99 thru 02/09
- 1 tsp. of raisins
- 1 tsp. of pepitas
- 1 Tbsp. of ATHENOS Traditional Crumbled Feta Cheese
- For the dressing
- 1 Tbsp. of olive oil
- 1 tsp. of balsamic vinegar
- 1/2 tsp. of Italian seasoning
Method
- On a salad plate or bowl add first the spring mix, then place the slices of the green apple, add the raisins, the pepitas and the feta cheese.
- Prepare the vinaigrette dressing combining all ingredients of the list in a separate bowl.
- Serve the salad with a side of the balsamic vinaigrette dressing and enjoy.
