Ingredients

  • 3 Tbsp. oil
  • 3 lb. beef, cubed
  • 3 white onions, chopped
  • 2 c. beef stock
  • 1 lb. carrots, chopped
  • 1 lb. parsnips, chopped
  • 1 lb. rutabagas, chopped
  • 1 lb. potatoes, chopped
  • 2 c. dark beer

Method

  • Heat a pan with oil.
  • Saute meat until well done.
  • You may have to cook meat in 3 separate batches.
  • Remove meat.
  • Using same oil, saute onions for 8 minutes.
  • Add meat back to pan.
  • Pour beer and beef stock in; cover.
  • Let cook for 1 hour on low heat.
  • Add vegetables; cover.
  • Simmer for 1 hour.
