Ingredients
- 3 Tbsp. oil
- 3 lb. beef, cubed
- 3 white onions, chopped
- 2 c. beef stock
- 1 lb. carrots, chopped
- 1 lb. parsnips, chopped
- 1 lb. rutabagas, chopped
- 1 lb. potatoes, chopped
- 2 c. dark beer
Method
- Heat a pan with oil.
- Saute meat until well done.
- You may have to cook meat in 3 separate batches.
- Remove meat.
- Using same oil, saute onions for 8 minutes.
- Add meat back to pan.
- Pour beer and beef stock in; cover.
- Let cook for 1 hour on low heat.
- Add vegetables; cover.
- Simmer for 1 hour.
