Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 125 g (4 oz) ham, sliced
  • 6 eggs
  • ¼ cup (60 ml/2 fl oz) milk
  • 2 cups cooked fusilli or spiral pasta (150 g/5 oz uncooked)
  • 3 tablespoons grated parmesan
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • ½ cup (60 g/2 oz) freshly grated Cheddar cheese

Method

1. Heat half the oil in a frying pan. Add the onion and stir over low heat until softened. Add the sliced ham to the pan and stir for 1 minute. Transfer to a plate and set aside.

2. in a bowl, whisk the eggs, milk and salt and pepper, to taste. Stir in the pasta, Parmesan, herbs and onion mixture.

3. Heat the remaining oil in the same pan. Pour the egg mixture into the pan. Sprinkle with cheese. Cook over medium heat until the mixture begins to set around the edges. Place under a hot grill to complete the cooking. Cut into wedges for serving.
