  • 12 lb penne pasta (uncooked)
  • 1 -2 tablespoon olive oil
  • 12 lb boneless skinless chicken breast
  • 12 cup yellow onion, sliced
  • 1 (15 ounce) can diced tomatoes with onion garlic and basil
  • 2 tablespoons fresh parsley, chopped


  • Cook pasta in boiling water until al dente.
  • Meanwhile, heat olive oil in a large skillet over medium high heat.
  • Cut chicken into 1 inch cubes and add to skillet along with onions.
  • Cook until chicken is browned on all sides and onions are softened.
  • Add tomatoes and reduce heat to medium-low.
  • Gently mash tomato pieces with a spoon or fork to break them up slightly.
  • Simmer 5-10 minutes while pasta finishes cooking.
  • Combine chicken mixture with drained pasta and sprinkle with fresh parsley.
