Ingredients

  • 4 c. thinly sliced zucchini
  • 1 c. chopped onion
  • 1/4 c. oleo
  • 1/2 c. chopped parsley or 2 Tbsp. parsley flakes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. sweet basil
  • 1/4 tsp. oregano
  • 2 beaten eggs
  • 8 oz. (2 c.) shredded Mozzarella cheese
  • 8 oz. can crescent dinner rolls
  • 2 tsp. prepared mustard

Method

  • Melt oleo and saute zucchini and onion.
  • Stir in parsley, basil, oregano, salt, pepper and garlic powder.
  • Combine eggs and cheese.
  • Stir into zucchini mixture.
