Ingredients
- 125 g sweet wheatmeal biscuits
- 80 g butter, melted
- 4 egg yolks
- 400 g can condensed milk
- ½ cup lime juice
- 2 teaspoons finely grated lime rind
- 1 cup cream, whipped
- lime rind, for garnish
Method
1. Place the biscuits in a food processor and process for 30 seconds or until finely crushed.
2. Transfer to a bowl, add the butter and mix until the crumbs are well moistened. Press into a 23 cm diameter pie dish; refrigerate until firm. Preheat oven to 180°C.
3. Using electric beaters, beat the yolks, condensed milk, lime juice and rind in a large bowl for 1 minute or until combined. Pour into crust and smooth the surface. Bake for 20–25 minutes until set.
4. Allow pie to cool; refrigerate for 2 hours or until well chilled. Decorate with whipped cream and lime rind.
