Ingredients

  • Jumbo Shells (1 bag)
  • Minced Lamb (2 lbs)
  • Italian Diced Tomatoes (1 big can)
  • Onions (2, chopped)
  • Garlic (1 whole head, minced)
  • Red pepperflakes (2 tbsps)
  • Italian seasonings (2 tbsps)
  • Salt to taste
  • Olive Oil (2 tbsps)
  • Mozarella Cheese (1 cup)

Method

  • In a thick bottomed pan, heat olive oil. Saute the minced garlic till translucent. Then add the chopped onions, saute till translucent. Add the minced lamb and saute till brown. Pour the diced tomatoes, cover the pan and simmer till the meat is tender and the tomatoes are cooked.
  • Add the salt, red pepperflakes and Italian seasonings.
  • While the sauce is cooking, boil the jumbo shells al dente.
  • Stuff the minced meat and tomato sauce in the shells and places the shells in a shallow baking pan. Sprinkle parsely and cheese and place the pan in the oven, set at 350 deg for 10 minutes or until the cheese melts.
