Ingredients

  • 1 lb. lean ground beef
  • 1 tsp. minced garlic (1 clove)
  • 1 Tbsp. parsley flakes
  • 1 Tbsp. dried basil leaves
  • 1 1/2 tsp. salt
  • 1 (16 oz.) can peeled tomatoes
  • 1 (12 oz.) can tomato paste
  • 1 (8 oz.) pkg. lasagna, cooked al dente
  • 1 (24 oz.) carton large curd cottage cheese
  • 2 eggs, beaten
  • 1/2 tsp. pepper
  • 2 Tbsp. parsley flakes
  • 1/2 c. Parmesan cheese
  • 12 oz. sliced Mozzarella cheese

Method

  • In a large saucepan, brown ground beef; drain.
  • Add garlic, parsley, basil, salt, tomatoes and tomato paste.
  • Bring to a boil; reduce heat.
  • Simmer, uncovered, for 30 minutes, stirring frequently.
  • Combine cottage cheese, eggs, pepper, parsley flakes and Parmesan cheese.
  • Grease a 13 x 9 x 2-inch baking dish. Spread a thin layer of the tomato sauce in the bottom of pan. Place a layer of noodles in dish; spread 1/2 the cottage cheese mixture over noodles.
  • Layer with 1/2 the Mozzarella; top with 1/2 the sauce mixture.
  • Repeat process, topping with noodles and covering with sauce.
  • Bake, uncovered, at 375° for 30 to 40 minutes.
  • Serves 8 to 10.
  • Freezes (before baking) well.
