- 1 lb. lean ground beef
- 1 tsp. minced garlic (1 clove)
- 1 Tbsp. parsley flakes
- 1 Tbsp. dried basil leaves
- 1 1/2 tsp. salt
- 1 (16 oz.) can peeled tomatoes
- 1 (12 oz.) can tomato paste
- 1 (8 oz.) pkg. lasagna, cooked al dente
- 1 (24 oz.) carton large curd cottage cheese
- 2 eggs, beaten
- 1/2 tsp. pepper
- 2 Tbsp. parsley flakes
- 1/2 c. Parmesan cheese
- 12 oz. sliced Mozzarella cheese
Method
- In a large saucepan, brown ground beef; drain.
- Add garlic, parsley, basil, salt, tomatoes and tomato paste.
- Bring to a boil; reduce heat.
- Simmer, uncovered, for 30 minutes, stirring frequently.
- Combine cottage cheese, eggs, pepper, parsley flakes and Parmesan cheese.
- Grease a 13 x 9 x 2-inch baking dish. Spread a thin layer of the tomato sauce in the bottom of pan. Place a layer of noodles in dish; spread 1/2 the cottage cheese mixture over noodles.
- Layer with 1/2 the Mozzarella; top with 1/2 the sauce mixture.
- Repeat process, topping with noodles and covering with sauce.
- Bake, uncovered, at 375° for 30 to 40 minutes.
- Serves 8 to 10.
- Freezes (before baking) well.
