- 2/3 cup olive oil
- 1/3 cup white balsamic vinegar
- 1 tablespoon finely minced shallot
- 1 -2 teaspoon sugar
- 2 teaspoons freshly grated lemon zest
- 1 teaspoon dried lavender (food grade) or 2 teaspoons fresh lavender (food grade)
- 1/2 teaspoon salt
- 1/4 teaspoon mustard powder
- 1/4 teaspoon ground pepper
- 1 teaspoon dried thyme leaves
Method
- In a blender, puree the vinegar, shallots and lemon.
- While still running, add the sugar, lavender, salt, mustard, and pepper. Slowly pour in olive oil.
- Transfer dressing to a jar and stir in the thyme leaves.
