Ingredients
- 2 egg yolks
- 1 Tbsp. grated lemon rind
- 1/3 c. lemon juice
- 1 c. sugar
- 3 Tbsp. flour
- 1 c. milk
- 2 egg whites, stiffly beaten
Method
- Beat egg yolks well.
- Blend in lemon rind, lemon juice, sugar, flour and milk.
- Fold in egg whites, stiffly beaten.
- Pour into a pastry-lined pan.
- Bake 10 minutes in a hot 450° oven; then reduce to a moderate 350° oven and bake 20 to 25 minutes longer or until a knife inserted near the edge comes out clean.
