Ingredients

  • 2 egg yolks
  • 1 Tbsp. grated lemon rind
  • 1/3 c. lemon juice
  • 1 c. sugar
  • 3 Tbsp. flour
  • 1 c. milk
  • 2 egg whites, stiffly beaten

Method

  • Beat egg yolks well.
  • Blend in lemon rind, lemon juice, sugar, flour and milk.
  • Fold in egg whites, stiffly beaten.
  • Pour into a pastry-lined pan.
  • Bake 10 minutes in a hot 450° oven; then reduce to a moderate 350° oven and bake 20 to 25 minutes longer or until a knife inserted near the edge comes out clean.
