Ingredients
- 3 None large eggs, separated
- 1 cup granulated sugar
- 2 1/2 tbsp butter, melted
- 1 cup milk
- 2 tsp lemon zest
- 1/3 cup lemon juice
- 1/2 cup self-rising flour, sifted
Method
- Preheat oven to 350°F. Grease a large baking dish.
- Whip egg yolks and 1/2 cup sugar until thick and creamy. Stir in butter, milk, lemon zest, lemon juice and flour.
- Whip egg whites to soft peaks. Gradually add remaining sugar, beating until dissolved between additions. Fold into lemon mixture in 2 batches.
- Transfer to prepared dish. Place in a roasting pan and add enough hot water to come halfway up sides of dish. Bake for 50 mins, or until pudding is set and browned on top.
