Ingredients

  • 3 None large eggs, separated
  • 1 cup granulated sugar
  • 2 1/2 tbsp butter, melted
  • 1 cup milk
  • 2 tsp lemon zest
  • 1/3 cup lemon juice
  • 1/2 cup self-rising flour, sifted

Method

  • Preheat oven to 350°F. Grease a large baking dish.
  • Whip egg yolks and 1/2 cup sugar until thick and creamy. Stir in butter, milk, lemon zest, lemon juice and flour.
  • Whip egg whites to soft peaks. Gradually add remaining sugar, beating until dissolved between additions. Fold into lemon mixture in 2 batches.
  • Transfer to prepared dish. Place in a roasting pan and add enough hot water to come halfway up sides of dish. Bake for 50 mins, or until pudding is set and browned on top.
