Ingredients
- 4 to 5 chicken breasts, slice into 3 or 4 strips
- 1 Tbsp. oil
- 1 c. celery, chopped
- 1 c. green bell pepper, chopped
- 1 large onion, chopped
- 1 small jar pimentos
- 10 ripe olives, sliced
- 1 c. water
Method
- Brown chicken and oil in a large skillet.
- When chicken is almost done, add all vegetables.
- Stir and cook until vegetables are cooked but still crisp.
- Add 1 cup water, salt and pepper to taste.
- Simmer about 10 minutes.
- Serves 6.
