Ingredients

  • 3/4 c. vinegar
  • 3/4 c. sugar
  • 1 Tbsp. water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 (17 oz.) can drained small green peas
  • 1 (12 oz.) can drained Shoe Peg corn
  • 1 (15 oz.) can drained French-style string beans
  • 1 (2 oz.) jar drained pimento (optional)
  • 1 c. chopped celery (optional)
  • 1 c. chopped onion (optional)

Method

  • Combine first 5 ingredients in small saucepan.
  • Bring to a boil for 1 minute.
  • Let cool completely.
  • Combine the remaining ingredients; toss lightly.
  • Pour marinade over vegetables.
  • Stir gently.
  • Cover and refrigerate overnight.
