Ingredients

  • 2 medium potatoes, peeled and cut up
  • 1 Tbsp. snipped parsley
  • 1/8 tsp. dried thyme, crushed
  • 1/8 tsp. dried marjoram, crushed
  • salt
  • pepper
  • 2 beaten eggs
  • 1/2 c. finely crushed saltine crackers (14 crackers)
  • 1/3 c. tomato sauce
  • 1/4 c. finely chopped green pepper
  • 3/4 tsp. salt
  • 1 1/2 lb. lean ground beef
  • 1/4 c. catsup
  • 1/4 tsp. dry mustard

Method

  • Cook potatoes in salted water until tender; drain, reserving liquid.
  • Mash potatoes, adding about 3 tablespoons of the reserved liquid to make a stiff consistency.
  • Stir in parsley, thyme and marjoram.
  • Season to taste with salt and pepper.
  • Set potatoes aside.
