- 2 medium potatoes, peeled and cut up
- 1 Tbsp. snipped parsley
- 1/8 tsp. dried thyme, crushed
- 1/8 tsp. dried marjoram, crushed
- salt
- pepper
- 2 beaten eggs
- 1/2 c. finely crushed saltine crackers (14 crackers)
- 1/3 c. tomato sauce
- 1/4 c. finely chopped green pepper
- 3/4 tsp. salt
- 1 1/2 lb. lean ground beef
- 1/4 c. catsup
- 1/4 tsp. dry mustard
Method
- Cook potatoes in salted water until tender; drain, reserving liquid.
- Mash potatoes, adding about 3 tablespoons of the reserved liquid to make a stiff consistency.
- Stir in parsley, thyme and marjoram.
- Season to taste with salt and pepper.
- Set potatoes aside.
