Ingredients

  • 1 package phyllo dough
  • 2/3 pound minced meat
  • 1/2 onion
  • 2 tablespoons pine nuts
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ras el hanout
  • salt
  • ground black pepper
  • olive oil

Method

  • Finely chop the onion and fry in a drizzle of olive oil. Add the meat and spices, and let simmer for 10 minutes. Season with salt and pepper. Remove from heat and add the pine nuts. Cool.
  • Preheat oven to 450 degrees Fahrenheit.
  • Take a sheet of filo pastry and fold it in half to form a rectangle. Place this rectangle so that it faces you vertically.
  • Using the meat mixture, form a small sausage for stuffing, and place on top of the rectangle. Roll all sides by folding so that the roll is sealed. Brush the roll with oil, and place on a baking sheet lined with parchment paper. Repeat this step until you've used all the ingredients. Bake in the oven for 4-5 minutes on each side.
