Ingredients

  • 1 onion, diced
  • 12 cup cracker crumb
  • 8 fluid ounces low-sodium tomato sauce
  • 14 cup brown sugar
  • 2 fluid ounces vinegar
  • 1 teaspoon prepared mustard
  • 1 egg
  • 2 lbs ground chuck
  • 1 12 teaspoons salt substitute
  • 14 teaspoon pepper

Method

  • Heat oven to 400F.
  • Mix tomato sauce with sugar, vinegar, and mustard until dissolved.
  • With fork, lightly beat egg; add onion, crackers, ground chuck, salt and pepper, and 1/2 cup of tomato mixture and combine lightly but thoroughly.
  • In bowl, shape meat into oval loaf; turn into shallow baking pan.
  • Pour the rest of the tomato sauce over loaf.
  • Bake for 45 minutes, basting occasionally.
