Ingredients

  • 1 box couscous,
  • 1 tbsp olive oil
  • 1 small onion, diced small
  • 1/2 green pepper, diced small
  • 2 tsp cocoa powder
  • 1 tsp cinnamon
  • 1/2 tsp chili powder
  • pinch sugar
  • 1/4 cup pistachios
  • 2-3 green onions, chopped (for garnish)

Method

  • Prepare couscous as directed on box, substituting vegetable broth for the water.
  • While couscous is cooking, heat olive oil in a small skillet over medium-high heat. Saute onions and pepper together until soft and just turning brown.
  • Place cooked couscous in a bowl, add sauted vegetables, cocoa powder, cinnamon and sugar. Toss gently until mixed. Top with pistachios and green onions.
