Ingredients

  • 1 (9-inch) unbaked pie shell
  • 2 eggs
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1/8 tsp. salt
  • 1/4 c. melted butter
  • 3/4 c. chopped walnuts or pecans
  • 1 (28 oz.) jar mincemeat

Method

  • In a large bowl, beat eggs.
  • Combine sugar, flour and salt; gradually stir into eggs.
  • Add butter, walnuts and mincemeat; mix well.
  • Pour into pastry shell.
  • Bake at 400° for 15 minutes. Reduce heat to 325°; bake 50 minutes longer, or until filling is slightly puffed and firm.
  • Refrigerate any leftovers.
